Pasta with Hen of the Woods (Maitake) Mushrooms




This recipe highlights the savory nature of our Hen of the Woods Mushrooms with a rich cream sauce accented with tomatoes, onion and garlic and a bit of citrus.


Ingredients

·         2 Tablespoons Butter
·         1/4 Cup Onion, julienned
·         8 Cloves Garlic, chopped
·         4 Ounce Hen Of The Woods Mushrooms (Maitake)
·         3 Tablespoons Sherry
·         1/4 Lemon, juiced and zested
·         1 Cup Heavy Cream
·         1/2 Cup Tomato, peeled, seeded and chopped
·         Fine Sea Salt
·         Fine Ground Black Pepper
·         1 Pound Dried Pasta (Any Shape), cooked

Directions

1.   Melt butter in large saucepan over medium-high heat. Add onion, and sauté until caramelized.
2.   Add garlic, and cook just until softened and fragrant. Add mushrooms, reserved mushroom soaking liquid, sherry, and lemon zest and lemon juice. Cook until reduced by half.
3.   Add heavy cream and tomatoes. Cook until reduced to slightly thickened consistency.
4.   Season to taste with salt and ground black pepper. Serve over cooked pasta. Enjoy!
