Ear Mushrooms
The many ways to use these wonderful, rich flavored
mushrooms;
They're good added to omelets. Sauté with
bell peppers (cut into slivers) and sliced onions. Add beaten eggs.
Use them in vegetable fritters. Mix beaten eggs, flour (1/3 cup flour per egg), chopped vegetables, and wood ears, mix together and fry.
They give a nice texture and look to soups. Add to the soup 6-7 minutes before it is done cooking.

Sautéed with bacon then added to spinach and halved cherry tomatoes makes for a nice salad.
Stir fry chopped boneless chicken thighs
with onion and wood ears, add other favorite vegetables, add orange Szechuan
sauce and serve over rice or noodles.
Use your imagination and add them to anything you think these mushrooms would add to the texture and the look of the meal, such as sautéing with greens and using as a bed for fish or meat medallions.
